2. Michael Bisping vs. Luke Rockhold UFC 199

Nobody gave Bisping a chance going into this fight, including Rockhold.

This fight was supposed to be the rematch between Chris Weidman and Luke Rockhold, unfortunately Weidman had to pull out due to a back injury. The first choice for his replacement was Jacare Souza, but he had to decline, citing a torn meniscus. Bisping had just narrowly defeated Anderson Silva in London, and was slotted into the title fight due to a lack of available other challengers more than anything else.

Bisping and Rockhold had fought previously, with Rockhold submitting the popular British fighter in the second round. But never underestimate a guy who has spent his entire career working towards a goal and finally gets his opportunity. Bisping knocked Rockhold out in the 1st round and won the UFC middleweight championship.
